Cheesy Tater Tot breakfast casserole

This recipe takes the classic Tater Tot casserole but subs in bacon and eggs for a breakfast that will make everyone rise and shine!

Ingredients

  • Nonstick cooking spray
  • 1 pound bacon, coarsely chopped
  • 1 pound bulk pork sausage
  • 1 small onion, chopped (1/2 cup)
  • 3-1/2 cups frozen bite-sized potato nuggets (such as Tater Tots®)
  • 3 cups shredded Colby-Jack cheese, divided
  • 8 large eggs
  • 2 cups milk
  • 1-1/2 tablespoons yellow mustard
  • Salt and ground black pepper to taste

Directions

  1. Preheat the oven to 425°F. Coat a 9x13-inch baking dish with cooking spray.
  2. Cook bacon over medium-high heat in a large skillet, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and let cool.
  3. Cook sausage and onion over medium-high heat using the same skillet; stir until browned and crumbly, about 5 minutes. Remove from heat. Crumble cooled bacon.
  4. Place potato nuggets evenly in prepared baking dish. Sprinkle with 1-1/2 cups of the cheese, half of the bacon, and all the browned sausage mixture.
  5. Mix eggs, milk, mustard, salt, and pepper together in a bowl. Pour over sausage. Sprinkle top with remaining cheese and bacon.
  6. Bake in the preheated oven until set and cheese is melted, about 35 minutes. Let cool for 15 minutes before serving. Makes 8 1-1/2-cup servings.
