Successful Farming's Editorial Guidelines Published on November 25, 2022 Close Photo: Meredith Operations Corporation Ingredients Nonstick cooking spray 1 pound bacon, coarsely chopped 1 pound bulk pork sausage 1 small onion, chopped (1/2 cup) 3-1/2 cups frozen bite-sized potato nuggets (such as Tater Tots®) 3 cups shredded Colby-Jack cheese, divided 8 large eggs 2 cups milk 1-1/2 tablespoons yellow mustard Salt and ground black pepper to taste Directions Preheat the oven to 425°F. Coat a 9x13-inch baking dish with cooking spray. Cook bacon over medium-high heat in a large skillet, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and let cool. Cook sausage and onion over medium-high heat using the same skillet; stir until browned and crumbly, about 5 minutes. Remove from heat. Crumble cooled bacon. Place potato nuggets evenly in prepared baking dish. Sprinkle with 1-1/2 cups of the cheese, half of the bacon, and all the browned sausage mixture. Mix eggs, milk, mustard, salt, and pepper together in a bowl. Pour over sausage. Sprinkle top with remaining cheese and bacon.
