Ingredients
- Nonstick cooking spray
- 1 pound bacon, coarsely chopped
- 1 pound bulk pork sausage
- 1 small onion, chopped (1/2 cup)
- 3-1/2 cups frozen bite-sized potato nuggets (such as Tater Tots®)
- 3 cups shredded Colby-Jack cheese, divided
- 8 large eggs
- 2 cups milk
- 1-1/2 tablespoons yellow mustard
- Salt and ground black pepper to taste
Directions
- Preheat the oven to 425°F. Coat a 9x13-inch baking dish with cooking spray.
- Cook bacon over medium-high heat in a large skillet, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and let cool.
- Cook sausage and onion over medium-high heat using the same skillet; stir until browned and crumbly, about 5 minutes. Remove from heat. Crumble cooled bacon.
- Place potato nuggets evenly in prepared baking dish. Sprinkle with 1-1/2 cups of the cheese, half of the bacon, and all the browned sausage mixture.
- Mix eggs, milk, mustard, salt, and pepper together in a bowl. Pour over sausage. Sprinkle top with remaining cheese and bacon.
- Bake in the preheated oven until set and cheese is melted, about 35 minutes. Let cool for 15 minutes before serving. Makes 8 1-1/2-cup servings.
