When Beth Marcoot’s ancestors came to the United States from Switzerland in 1840, they brought a Jersey calf on the boat with them. Today, Beth and her sister, Amy, are the seventh generation of Marcoots to run the family dairy in Greenville, Illinois, along with friend Audie Wall. I sat down for a quick conversation with Beth to talk about the business and working with family.

After earning master’s degrees in non-agricultural areas and striking out on their own, the Marcoot sisters came back to the farm when their father began thinking about retirement. In an effort to make the dairy sustainable and able to support multiple families, they added a creamery and cheese-making enterprise.
